As mentioned in the
audio, it's hard to give an exact recipe for a family recipe, but here goes.
Latkes (Potato Pancakes)
2 pounds russet or yukon gold potatoes
2 tablespoons flour
salt and pepper
plenty of vegetable oil
potatoes and onions and drain or wring out excess water using a kitchen towel. Beat an add eggs and mix with
potatoes, flour, salt and pepper in a bowl. Preheat oven to 200 degrees. Heat the oil (about 1/2 inch) up very hot
in a frying pan and add a few spoonfuls of the latke mix (small pancake size, about 3 inches across). Don't
overcrowd the pan. Cook until crispy and borwned on both sides. When they are cooked, remove the latkes form the
oil and drain on paper towels on a cookie sheet. Place the cooked latkes in the oven to keep warm until you have
cooked a mountian of potato pancakes. Serve topped with apple sauce and sour cream.
